The sujihiki is very impressive knife to have in your collection, purpose made for slicing boneless meats and fish. The short height of the blade creates less friction when slicing and helps it to draw through fish and meat effortlessly, couple this with the 240mm blade length, enabling you to achieve super sharp, clean slices.

With is stainless cladding and core steel made from AUS 10 (a top quality stainless steel with good sharpen-ability) the NDH is a great range for those looking to use handmade Japanese knives but prefer not to have the responsibility caring for carbon steel. As is typical of handmade Japanese knives it's ground to be thin behind the cutting edge, ensuring a smooth and easy cut.

Finished to an excellent standard they would make a great choice for keen home cooks or professionals working within the industry.
