The Gyuto is Japan?s answer to the western chef knife, in a country where the food culture has given birth to many specific knives for specific purposes, the gyuto was created in the latter part of the 19c after the son of a prominent Japanese blacksmith visited the west to investigate new knife making technologies. Ever since then it has continued to evolve into the hugely popular style we recognise today.
This particular knife is a Kiritsuke (hence the angular, super pointy tip) gyuto with a Zelkova wood handle in the traditional Japanese (Wa) style.
The blade on this knife is a made from a relatively new type of powder steel known as SRS13. SRS13, depending on the heat treatment is capable taking and holding a wicked sharp edge.
